15-Minute Shrimp Scampi
Instructions
- Cook pasta in well-salted boiling water until very al dente, about 1 minute less than package. Reserve 1 cup pasta water. Drain.
- While pasta cooks, season shrimp with salt and pepper. Heat olive oil in a large skillet over high heat. Add shrimp in a single layer and cook 1 minute per side until pink. Remove from pan.
- Reduce to medium heat. Add butter and garlic and cook 1 minute. Add wine and red pepper flakes, let simmer 2 minutes. Add lemon juice.
- Add pasta to skillet and toss with the sauce, adding pasta water as needed for a silky consistency. Return shrimp. Toss again. Taste for seasoning.
- Plate and finish with fresh parsley and lemon wedges.
Notes
Angel hair cooks in 2-3 minutes so have everything prepped before you start. Shrimp go from perfect to rubbery fast — get them out of the pan as soon as they're pink and just curled.
