Banana Bread

Instructions

  1. Preheat oven to 350°F. Grease a 4x8-inch loaf pan.
  2. Mash bananas thoroughly with a fork in a large bowl — leave a few small chunks for texture. Stir in melted butter.
  3. Mix in sugar, egg, and vanilla. Sprinkle baking soda and salt over the top and stir in. Add flour and mix until just combined. Fold in walnuts or chocolate chips if using.
  4. Pour into prepared pan and bake 60-65 minutes, until a toothpick inserted in the center comes out clean with just a few moist crumbs. If the top browns too quickly, cover loosely with foil.
  5. Cool in pan 10 minutes before removing to a rack.

Notes

The riper the bananas, the sweeter and more flavorful the bread. Black bananas are actually ideal. If your bananas aren't ripe enough, bake them unpeeled at 300°F for 15 minutes.
