Beef Stir Fry with Broccoli
Instructions
- Freeze steak for 20 minutes — this makes it much easier to slice thinly. Slice against the grain into 1/4-inch strips. Toss with 1 tbsp soy sauce and 1 tsp cornstarch. Mix sauce ingredients in a small bowl.
- Heat oil in a wok or large skillet over very high heat until smoking. Add beef in a single layer and cook without moving for 1 minute. Toss and cook another minute until browned. Remove from pan.
- Add broccoli and bell pepper to the hot pan with a splash of water. Stir fry 3-4 minutes until crisp-tender.
- Add garlic and ginger and toss 30 seconds. Return beef. Pour in sauce and toss to coat everything. Cook 1-2 minutes until sauce thickens and glazes everything.
- Serve immediately over rice. Garnish with sesame seeds.
Notes
The keys to great stir fry: very hot pan, small batches, and everything prepped before you start cooking. Once the heat is on, it goes fast.
