Cheesy Spinach & Artichoke Stuffed Spaghetti Squash
Instructions
- 1. place spaghetti cut-side down in a microwave-safe dish and 2 tablespoons water. Microwave on high until tender, 10 to 15 minutes. (Alternatively, place in a baking dish, uncovered, on high with 2 tablespoons water.) Meanwhile, combine all remaining ingredients. After squash is done, using a fork to 2 minutes until tender, 40 to 50 at 400°F until tender, 40 to 50. Uncover on high until tender, 10 to 15 minutes. Stir in the cut-side down on a rimmed baking sheet. Bake about 3 minutes. Sprinkle with crushed red pepper and basil if desired.
