Fluffy Buttermilk Pancakes

Instructions

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl. In another bowl, whisk buttermilk, eggs, melted butter, and vanilla.
  2. Pour wet ingredients into dry and stir just until combined — lumpy is perfect. Do not overmix. A few streaks of flour are totally fine. Let the batter rest 5 minutes.
  3. Heat a griddle or large skillet over medium heat. Brush with butter. Ladle about 1/3 cup batter per pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook 1-2 more minutes.
  4. Serve immediately with extra butter and warm maple syrup.

Notes

The resting time lets the baking soda react with the buttermilk acid, creating more bubbles for fluffier pancakes. Overmixing develops gluten and makes them tough — resist the urge to stir until smooth.
