Honey Garlic Chicken Thighs

Instructions

  1. Pat chicken dry and season with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken skin-side down and cook without moving for 7-8 minutes until skin is golden and crispy. Flip and cook 3 minutes more. Remove chicken and set aside.
  2. Preheat oven to 400°F. Drain most fat from pan, leaving about 1 tbsp. Add garlic and cook 1 minute. Add honey, soy sauce, vinegar, sesame oil, and red pepper flakes. Let it bubble and reduce slightly, about 2 minutes.
  3. Return chicken to pan, skin-side up. Spoon sauce over the chicken. Transfer to oven and bake 15-20 minutes until cooked through, basting once or twice with the pan sauce.
  4. Garnish with sesame seeds and sliced green onions. Serve with steamed rice.

Notes

Getting the skin truly crispy in the pan before the oven is what makes this dish. Don't move the chicken while it's rendering — patience equals crunch.
