Italian Sausage and Peppers

Instructions

  1. Brown sausages in olive oil in a large skillet over medium-high heat, turning until browned on all sides, about 8 minutes. They don't need to be fully cooked through yet. Remove and set aside.
  2. In the same pan, add peppers and onion. Cook over medium-high heat, stirring occasionally, until softened and beginning to caramelize, about 10 minutes. Add garlic, oregano, and red pepper flakes. Cook 2 minutes.
  3. Add wine and let it reduce by half. Add diced tomatoes. Slice sausages into thick coins and return to pan. Simmer together 15 minutes until everything is cooked through and sauce has thickened. Season with salt and pepper.
  4. Garnish with fresh basil. Serve in hoagie rolls or over rigatoni.

Notes

This is incredibly versatile — eat it on a hoagie roll for an easy dinner, or serve over pasta for a more substantial meal. Leftovers are wonderful as a pizza topping.
