Lemon Bars
Instructions
- Preheat oven to 350°F. Grease a 9x13 pan.
- Make crust: mix softened butter, powdered sugar, flour, and salt until crumbly. Press evenly into the pan. Bake 20 minutes until just lightly golden.
- Make filling: whisk eggs, sugar, and flour until smooth. Stir in lemon juice and zest. Pour over the hot crust (hot crust ensures a good bond).
- Return to oven for 20-25 minutes until filling is just set — it should have a very slight jiggle in the center and no longer look liquid.
- Cool completely in pan, then refrigerate at least 1 hour. Dust generously with powdered sugar and cut into squares.
Notes
Use fresh lemon juice — bottled just doesn't have the same brightness. The bars keep well refrigerated for up to 5 days, and honestly taste better on day two.
