Lemon Herb Roasted Chicken Legs
Instructions
- Preheat oven to 400°F. Combine olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper in a bowl. Add chicken legs and toss to coat. Let marinate 30 minutes at room temperature if you have time, or go straight to the oven.
- Arrange chicken in a roasting pan in a single layer. Pour broth around (not over) the chicken. Tuck lemon slices around the pan.
- Roast 40-45 minutes until skin is golden and crispy and juices run clear. Baste once halfway through with the pan juices.
- Rest 5 minutes. Serve with the pan juices spooned over top and fresh parsley.
Notes
Chicken legs are incredibly forgiving — they actually get better and juicier the longer they cook, making them perfect for beginner cooks.
