Lime-Jalapeño Chili-Lime
Instructions
- 1. To prepare the chicken: Stir oil, chili powder, lime zest and juice, garlic, cumin and salt together in a medium bowl. Add chicken and toss to coat. Cover and marinate in the refrigerator for at least 2 hours or overnight.
- In the refrigerator for at least 2 hours or overnight. Top with chicken, Mexican corn, pico de gallo and cilantro, divided evenly. Serve the portions on the side so that everyone can make their own bowl. Season with hot sauce, lime wedges, and not hot sauce.
