Meatloaf with Brown Sugar Glaze
Instructions
- Preheat oven to 350°F. Sauté onion and garlic in a bit of oil until soft, about 5 minutes. Let cool slightly.
- In a large bowl, combine beef, pork, breadcrumbs, eggs, milk, Worcestershire, thyme, salt, pepper, and the cooked onion mixture. Mix with your hands just until combined — overworking makes it tough.
- Shape into a loaf on a rimmed baking sheet (not in a loaf pan — free-form gives you more surface area for the glaze). Mix glaze ingredients and spread half over the top and sides.
- Bake 45 minutes. Spread remaining glaze on top and bake another 15-20 minutes until internal temperature reads 160°F. Let rest 10 minutes before slicing.
- Serve with mashed potatoes and green beans.
Notes
The pork-beef combination keeps the meatloaf moist. If you only have beef, add an extra egg yolk. Leftovers make unbeatable sandwiches on toasted white bread with a swipe of mayo.
