One-Pot Creamy Tomato Orzo

Instructions

  1. Melt butter in a large pot over medium heat. Cook onion 5 minutes until soft. Add garlic and cook 1 minute. Add red pepper flakes.
  2. Add orzo and toast for 2 minutes, stirring, until lightly golden. Add crushed tomatoes and broth. Season with salt, pepper, and basil.
  3. Bring to a boil, then simmer stirring often for 8-10 minutes until orzo is cooked and most liquid is absorbed.
  4. Stir in cream and Parmigiano. Add spinach and stir until wilted. Taste and adjust seasoning — it should be creamy and rich.
  5. Serve immediately with extra Parmigiano.

Notes

Stir this more often than you think you need to — the starch from the orzo can make it stick to the pot. Keep the heat moderate and stir every minute or so.
