Pork Chops with Apple Pan Sauce
Instructions
- Season pork chops generously with salt and pepper. Heat oil in a large skillet over medium-high heat. Sear chops 4 minutes per side until golden brown. Transfer to a plate and tent with foil.
- In the same pan, reduce heat to medium. Add butter, shallots, and garlic. Cook 2 minutes. Add apple slices and cook 3 minutes until slightly softened.
- Add cider and broth, scraping up any browned bits. Stir in thyme and Dijon. Simmer 5 minutes until sauce has reduced by a third.
- Return pork chops to the pan and spoon sauce over them. Cook 2-3 more minutes until chops reach 145°F internal temperature.
- Rest 3 minutes. Serve with the apple pan sauce and egg noodles or mashed potatoes.
Notes
Don't overcook pork chops — 145°F with a 3-minute rest is safe and keeps them juicy. Pink in the middle is perfectly fine and actually desirable.
