Shepherd's Pie
Instructions
- Preheat oven to 400°F. Brown lamb in olive oil over medium-high heat, breaking it up. Add onion, carrots, and garlic. Cook 5 minutes.
- Stir in tomato paste and cook 2 minutes. Add broth, Worcestershire, and thyme. Simmer 10 minutes until sauce thickens. Stir in peas. Season with salt and pepper.
- Spread meat mixture in a baking dish. Spread mashed potatoes over the top, right to the edges to seal. Use a fork to create ridges on the surface — these will brown beautifully.
- Bake 25-30 minutes until top is golden and filling is bubbling around the edges. Rest 5 minutes before serving.
Notes
Make your mashed potatoes well-seasoned and creamy — they're not just a topping, they're half the dish. Don't be shy with butter and salt.
