Slow Cooker Chicken Tikka Masala
Instructions
- Season chicken with salt. In a pan, sauté onion in butter over medium heat until soft and golden, about 10 minutes. Add garlic, ginger, and all spices and cook 2 minutes until incredibly fragrant.
- Transfer onion mixture to slow cooker. Add crushed tomatoes, sugar, and chicken. Stir to combine. Cook on high for 3 hours or low for 5-6 hours.
- Using two forks or a potato masher, break up any large chicken pieces to your desired texture. Stir in heavy cream. Taste and adjust salt and spice level.
- Serve over basmati rice with warm naan and fresh cilantro.

This freezes perfectly — make a double batch and freeze individual portions for busy nights. The flavor is even better the next day after the spices have had time to mellow and meld.
