Slow Cooker Chicken Tikka Masala

Instructions

  1. Season chicken with salt. In a pan, sauté onion in butter over medium heat until soft and golden, about 10 minutes. Add garlic, ginger, and all spices and cook 2 minutes until incredibly fragrant.
  2. Transfer onion mixture to slow cooker. Add crushed tomatoes, sugar, and chicken. Stir to combine. Cook on high for 3 hours or low for 5-6 hours.
  3. Using two forks or a potato masher, break up any large chicken pieces to your desired texture. Stir in heavy cream. Taste and adjust salt and spice level.
  4. Serve over basmati rice with warm naan and fresh cilantro.

Notes

This freezes perfectly — make a double batch and freeze individual portions for busy nights. The flavor is even better the next day after the spices have had time to mellow and meld.
