Slow-Roasted Pork Shoulder
Instructions
- Preheat oven to 300°F. Using a paring knife, make small slits all over the pork and stuff each with a slice of garlic.
- Mix oil and all spices into a paste. Rub all over the pork, getting into every crevice. Place in a roasting pan fat-side up.
- Pour orange juice and broth into the bottom of the pan. Add orange slices around the pork. Cover tightly with foil.
- Roast 4 hours, then uncover and increase heat to 375°F. Roast another 45-60 minutes until the exterior is caramelized and fork-tender. The internal temp should reach 195-205°F for proper pulling texture.
- Rest 30 minutes covered with foil, then pull apart with two forks. Toss with some of the pan juices.
Notes
This is the most forgiving roast there is — it only gets better the longer it cooks. Serve in tacos, over rice, in sandwiches, or with roasted vegetables.
