Smash Burgers
Instructions
- Mix special sauce ingredients and refrigerate. Divide beef into 8 equal balls — about 3 oz each. Don't overwork the meat.
- Heat a cast iron griddle or skillet over high heat until smoking. Place onion slices down first. Put a beef ball on top of each onion mound. Immediately smash flat with a heavy spatula — press hard and hold for 10 seconds. Season with salt and pepper.
- Cook 2-3 minutes until edges are brown and crispy. Flip. Immediately add cheese. Cook 1 minute more.
- Stack two patties per bun. Spread special sauce on both sides of the toasted bun. Add pickles. Eat immediately.
Notes
The smash is everything — it creates incredible surface area for browning (the Maillard reaction). American cheese melts perfectly here. Don't try to be fancy with the cheese choice.
